Craisins® Dried Cranberries and Pecan Quinoa Salad

Ingredients
300g pasta spirals or penne
2 cooked chicken breast, skinned and cubed
1 x 150g pack Ocean Spray® Craisins® Dried Cranberries
2 celery stick, sliced
3 spring onions, sliced
50g toasted flaked almonds, toasted
For the dressing:
1 x 150g carton plain yogurt
3 tbsp regular or light mayonnaise
3 tbsp Ocean Spray® Cranberry & Raspberry Juice Drink
1/2 tsp salt
1 tsp medium curry powder
Steps
Put the quinoa in a pan and cover well with vegetable stock. Bring up to the boil, then simmer for 15-20min or until the quinoa is tender (top up with stock as needed). Drain, then transfer to a serving bowl and leave to cool.
Once quinoa is cool, mix in the Ocean Spray® Craisins® Dried Cranberries, pecans, feta, spring onions and parsley.
In a small bowl, stir together lemon zest, juice, oil and plenty of seasoning. Pour over quinoa mixture and toss to combine. Serve.
